Crazy Cake Mix in a Jar

2 cups flour
2/3 cup Cocoa Powder
3/4 tsp. Salt
1 1/2 tsp. Baking Powder
1 1/3 cups Sugar

In a large bowl, combine flour, salt, cocoa powder & baking powder. Layer ingredients in jar in order given in a 1 quart canning jar. It is helpful to tap jar lightly on a padded surface (towel on counter) as you layer the ingredients to make all ingredients fit neatly. Use scissors to cut a 9 inch-diameter circle from fabric of your choice. Center fabric circle over lid and secure with a rubber band. Tie on a raffia or ribbon bow to cover the rubber band. Attach a card with the following directions:

Crazy Cake

This is a crazy cake because you mix the cake all together in the pan that you bake it in. Pour contents of jar into a 9 x 13 inch baking pan, then add the following ingredients:

3/4 cup Vegetable Oil
2 tsp. Vinegar
1 tsp. Vanilla
2 cups Water

Stir cake ingredients together using a wire whisk or fork, making certain that all ingredients are completely mixed together. Bake at 350 degrees F for 35 minutes. Frost as desired or serve sprinkled with powdered sugar, with fresh fruit on the side.


Devils Food Cake Mix in a Jar

2 cups Flour
1 tsp. Baking Soda
3/4 tsp. Salt
1/2 cup Cocoa Powder
1 1/2 cups Sugar

In a large bowl, combine flour, salt, cocoa powder & baking powder. Layer mixture and other ingredients in order given in a 1 quart canning jar. Devil's Food Cake

Cream 1/2 cup Vegetable Shortening with top layer of sugar in jar and beat until light and fluffy. Add 2 eggs and mix well. Slowly blend in 1 1/2 cups Milk and 1 tsp. Vanilla, then add remaining dry ingredients from jar, and blend until smooth. Pour into a 9 x 13 inch baking pan which has been greased and floured. Bake for 30 minutes at 350 degrees F.


Lemon Poppyseed Cake Baked in a Jar

2 2/3 cups sugar
2/3 cup shortening
4 eggs
1/2 cup fresh lemon juice
1/4 cup water
3 Tbsp. grated lemon peel
1 tsp. lemon extract
1/2 cup poppy seeds
3 1/2 cups flour
1 tsp. baking powder
2 tsp. baking soda
1 tsp. salt

1. In large bowl cream sugar and shortening with electric mixer.
2. Add eggs and mix well.
3. Add lemon juice, water, lemon peel, extract and poppy seeds.
4. Place dry ingredients in a separate large bowl and blend with a whisk.
5. Add creamed ingredients to dry ingredients and mix with whisk and spoon.
6. Place 1 cup batter each in 7 sterilized well-greased 1-pint wide- mouth canning jars. Wipe batter from rim.
7. Place jars on a baking sheet. Bake at 325 degrees F for 55 minutes, until a toothpick inserted in center comes out clean.
8. Wipe rims. Place hot sterilized seals and rings on hot jars. Keep in refrigerator for prolonged storage.


Snack Cake Mix with 2 Variations

Mix...
8 cups all-purpose flour
2 Tablespoons baking soda
1 Tablespoon salt
6 cups granulated sugar

In a large bowl, combine all ingredients. Stir with a wire whisk until blended. Divide mixture evenly into six 2 1/2 cup containers with tight-fitting lids, about 2 1/4 cups each. Seal containers. Label with date and contents. Store in a cool, dry place. Use within 10 to 12 weeks. Makes 6 packages or about 13 1/2 cups Snack Cake Mix.

Carrot Snack Cake

1 package Snack Cake Mix
1 egg -- slightly beaten
1/3 cup vegetable oil
1 cup grated carrots
3/4 cup orange juice
1 teaspoon ground cinnamon
1/2 cup chopped nuts
Cream Cheese Frosting -- see below

Preheat oven to 350 degrees F (175 degrees C). Pour Snack Cake Mix into an ungreased 8 or 9 inch square baking pan. In a medium bowl, combine egg, oil, carrots, orange juice and cinnamon, beating with a fork to blend. Stir into Snack Cake Mix until blended. Stir in nuts. Bake 35 to 45 minutes until a wooden pick inserted in center comes out clean. Prepare frosting; set aside. Cool cake on a rack. Spread frosting evenly over cooled cake. Makes 9 servings.

Cream Cheese Frosting:
3 Tablespoons butter or margarine, softened
1-3 ounce package cream cheese, softened
1 2/3 cups powdered sugar, sifted
1/2 teaspoon vanilla extract

In a small bowl, cream butter or margarine and cream cheese until light and fluffy. Beat in Powdered sugar and vanilla until smooth.

Banana-Walnut Snack Cake

1 package snack cake mix (see above)
1 egg
1/3 cup vegetable oil
1/2 cup mashed -- ripe banana
1/2 cup buttermilk -- milk, or water
1/2 cup chopped walnuts

Preheat oven to 350 degrees F (175 degress C). Pour snack cake mix into an ungreased 8 or 9 inch square baking pan. In a small bowl, combine remaining ingredients, beating with a fork to blend. Stir into snack cake mix until blended. Bake 30 to 35 minutes in preheated oven until a wooden pick inserted in center comes out clean. Cool on a rack. Makes 9 servings. Place a paper doily on the hot cake, dust with powdered sugar, then remove the doily.
