Hi everyone,
It's great to be back with you! :) This past month has kept me very busy
with lots of family visiting, so I finally have the time to come back and put
together a great issue of KCnM!
Can't you just feel fall in the air? I think autumn is my favorite season - it's cooling down after a hot summer, the leaves are falling...and it's time to pull out your favorite sweaters again. Hope you're all enjoying the cooler weather too - and please remember to email me with your favorite tips or recipes to christinam@nucleus.com. I appreciate your submissions!

Friendship Fruit Cake

I'm hoping somewhere out there there is a recipe similar to one that I received just recently The recipe I have is for a "friendship fruit cake" made from an assortment of canned fruits (peaches, pineapple, apricots, maraschino cherries) that are "fermented" in the same way that friendship cake starter typically is. This recipe calls for brandy in the mixture as well, and I'd like to try to find a similar recipe that does not require alcohol. Can you or your readers help?

Strawberry Salad

Head of romaine lettuce, torn into bite size pieces
one cucumber, pealed and sliced
1/2 cup (ish) of green onions, sliced
strawberries, sliced (we used about 1/2 a bag of frozen whole ones, but you could use more or less depending on your preferences.
Dressing
4 Tbsp liquid honey
4 Tbsp salad oil
3 Tbsp balsamic vinegar (or 4 Tbsp regular vinegar)
1 tsp poppy seeds
Pour dressing ingredients into a sealable container and shake to mix (fun!)
Put dressing over salad just before serving.

Dairy and Egg Free Chocolate Chip Cookies

1 cup shortening
1 cup Applesauce
1-1/2 cups Brown Sugar
1-1/2 cups White Sugar
2 tsp. Vanilla
4 Tbsp. Water
4 Tbsp. White Vinegar
4 tsp. Baking Powder
2 tsp. Baking Soda
5-1/2 to 6 cups Spelt Flour (White)
2 tsp. Salt
1 pkg. Chocolate or Carob Chips
1 cup Nut of choice (optional)
Mix together shortening, applesauce, sugars and vanilla. When well mixed, add water, vinegar and baking powder. Mix well. Then, add flour, baking soda and salt, followed by chocolate chips and nuts when almost mixed.
Bake at 350°F for 15 minutes on greased cookie sheet.

Greek Rice Salad (Light version)
Serving: 6
3 cups cooked medium grain brown rice
1 cup red grape tomatoes; sliced in half
1/3 cup pitted Kalamata olives, sliced
1/4 cup crumbled Feta cheese
1/4 cup vinaigrette or Italian-style dressing
salt and pepper to taste
Romaine lettuce leaves
Combine rice, tomatoes, olives, feta cheese and dressing in large bowl.
Season with salt and pepper. Toss well and serve on lettuce leaves, or use
lettuce leaves as "wraps" to hold filling.

Egg Skillet

Treat Dad like a king with this egg, potato, and bacon dish. Egg
Skillet is simple and easy to prepare and the kids can help. You can
cook the bacon yourself or buy one of the new pre-cooked bacon
products. If the man in your life prefers ham (like mine), cut about
2 slices of ham into 1/2 inch pieces and substitute for bacon.
What you need:
1 tablespoon of cooking oil
2 cups of frozen hash brown potatoes
6 eggs beaten
1 package of the pre-cooked bacon ( 2.1 ounce size) or 4 strips of
cooked bacon- they should be cut into 1/2 inch pieces (or ham)
1/3 cup of slice green onions
Salt and pepper to taste
1/3 cup of shredded sharp cheddar cheese (we prefer American)
Chopped tomatoes
What you do:
Heat the oil in a medium non-stick frying pan on medium high heat.
Add the potatoes and cook for 8-10 minutes until the potatoes are
browned, stirring occasionally.
Mix the eggs, bacon, onions, salt and pepper in a small bowl. Pour
egg mixture evenly over the potatoes. Reduce heat to medium low;
cover. Cook for 10 minutes or until the eggs are set. Sprinkle
with cheese and cover with lid just until the cheese is melted.
Remove from heat. Garnish with chopped tomatoes and additional
onions, if desired. Cut into wedges. Makes 6 servings.
