Honey Tea Bread Recipe

I love the idea of this recipe, because the cake actually has strong brewed tea right in the batter! Plus, lots of honey and spices to make it taste fabulous. Enjoy!

Tea Bread

10 oz flour
2 eggs, lightly beaten
1 cup strong tea
3 oz honey
8 oz raisins
1/2 tsp mixed spice (or make your own with a combination of cinnamon, cloves, ginger, etc.)
1 tbs baking powder

Preheat oven to 350F. Dissolve the honey into the tea, then pour over the raisins in a mixing bowl. Let sit for 2 hours. Stir in the eggs. Blend the dry ingredients together, then mix into the raisin mixture. Pour batter into a loaf pan and bake for about 70 minutes.
